VEGETARIAN LIKE VINCENT

Like Vincent, I, too, am on the path to vegetarianism.  My reasons for going vegetarian are many: (1) longevity -- eating a diet of fruits and vegetables can help one live longer and healthier, (2) reduce pollution and my carbon footprint on the planet, (3) ward off disease, (4) keep my weight down, (5) increase my energy, (6) become more "regular" by eating more fiber -- adding whole grains to my diet such as, oats, millet, coucous, corn, quinoa (pronounced keen-wa) buckwheat and bulgar, (7) save animals.  That's why I have decided to dedicate my life to a vegetarian life-style and eco-friendly and minimalist living. For a few years now I have been thinking about living a healthier life-style.  Not only in body, but mind and spirit, too. This will include me learning more about Ashtanga and Yin Yoga, reiki, aromatherapy, strength training and meditation.  It also includes de-cluttering and de-stressing my life. Just getting rid of so much unnecessary stuff and people.  Donating clothes; clearing out dressers and closets; paying bills on time; turning off the TV (except for LOCI); getting rid of negative people who bring you down with their negative energy and spending more time in nature.  My life has always been a journey, that I am sure.  I know I am the commander of my ship, the conductor of my train.  But there have been times when I did not pay attention to where I was heading, and like so many people ended up somewhere I didn't want to be.


Mindfulness.  During this phase of my life, I am truly going to take stock of what I want for myself -- where my journey takes me. With whom? That doesn't really matter. Whether I'm with someone or not, I will still be filled with joy. Because joy, not happiness, stems for inward and radiates outward.  And I believe that, for me, vegetarianism is one instrument among many that will help me achieve my goals. 

May angels always laugh with you.

  2. Where does this story about him going veggie come from? I don't believe it.

    As for #4, as a vegetarian of nearly 35 years' standing, I can assure you it doesn't stop you getting fat, if you work hard enough at it.

  3. T -- Hard ain't the word. This is not my first attempt at this feat, God knows. But thanx for the well wish. Anything worthwhile ain't coming easy for me. I put the if in difficult. Besides, I need a new challenge in my life right now. Cheers T!!

    Val -- I read it on Nantz' blog. I can't remember which post. Yes, you are certainly right about the weight. I have seen some vegetarians who weighted over 300 pounds. I heard that grains, especially pasta, can put a lot of pounds on a person. I just have to be extra vigilant about what I eat. Cheers Val!!

    it's carbohydrates & fat that makes for weight gain. Veggie's eat them, too.

  5. Wow good for you!!! I wish you the best of luck on your journey.

    I was a vegetarian for several years when we lived in California, b/c they make it easy for you, esp. at restaurants. Then we came to Washington and it became more difficult to follow a strict regimen soooo..... The bottom line is, I love meat. Chicken, pork, beef, bison...

  6. T, I forgot about FATS. You would think I'd remember that little tidbit after posting that sinful dessert yesterday. Haagen Dazs w/brownies. I need to be shot -- twice. I know I need to have my blood sugar counted. I love veggies -- will be eating lots.

    JoJo -- I love the idea that restaurants are incorporating more vegetarian meals on their menus, making it easier for the transition. Here in White Plains there are a few that cater to healthier eats. Being born under the sign of the Bull, I just get a sick feeling when exposed to too much meat. I know I need to take baby steps -- change does not come easy for Taurus'. I will eat fish for a while -- lessor of evils.

  7. People have told me it helps them if they themselves "a sin each week", especially as long as they are transitioning. At some point the sin becomes obsolete, but I guess it makes it easier to "digest" such a transition.

  11. Yes, I do live in WP. I live close to The Westchester -- the newer mall built about 10 to 15 years ago(?).

  12. Bread and pasta are good, 'cos they fill you up. What you put on them (butter, fatty sauces) are more of a problem.

    Really, crisps, cream cakes and chocolate are what were my downfall, none of them are forbidden.

    Val, have you ever tried a pasta called DeBules? I heard it is delicious and really good for you. I can't wait to try.

    I totally agree with you regarding the sweets. I naturally have a sweet tooth. Pies, cakes, chocolate -- desserts in any form would probably -- pray not -- be my ruin, too. Smile!!

  15. Val, I misspelled DeBules. It is spelled DeBoles. Actually, I'm going to lay blame squarely where it belongs -- on my professor. She misspelled the word. I Googled the word too.
